Our 2015 Santa Ynez Valley Cabernet Sauvignon is a beautifully understated wine with depth and nuance. Elegant aromas of dark plum and blackberry transform on the palate. Flavors of black olive, charred oak and dried cassis evolve into pomegranate and graphite on the mouth. The flavors are further enhanced by smooth tannins on the lingering finish.
Food Pairing Notes
This wine’s medium body and juicy mouthfeel make it an ideal pairing with peppered skirt steak.

Production Notes
The grapes were hand harvested from August 19 - October 1, 2015 and stored in open top fermenters for primary fermentation, then pressed off to barrel for secondary fermentation. It was aged for 10 months in French oak barrels of which 80% were new.
Vineyard Notes
The 2015 vintage had above average temperatures and no hard dormancy. An early bud break followed by a cooling period created a lull in flowering and set, especially in the lower elevation blocks. Warm summer months allowed the grapes to achieve full maturity. Overall the grapes were high in quality with smaller berry size, cluster size and weight which ultimately translated into intense flavor concentration. As a result, the 2015 vintage is rich, complex, and intense in character. The grapes for the 2015 Cabernet Sauvignon were sourced from select vineyard sites in the Santa Ynez Valley. The combination of full sun exposure, low rainfall, long growing season, and porous soils makes the Santa Ynez Valley a great site for all of the Bordeaux varieties.
