Winemaker Notes
Our 2015 Symphony is lush, fruity and sweet. Pale golden in color, floral aromas of lychee, papaya and guava come to mind on the nose. Flavors of pineapple, ripe nectarine and honeydew melon are enlivened by a gentle acidity. The spritz of CO2 contributes a crisp and refreshing layer. Production Notes
2015 was a warm and dry vintage in California which yielded ripe, high quality wines. Overall the weather was ideal, with warmer conditions creating a Symphony that had less citrus characteristics and richer, tropical fruit notes. The grapes were crushed and gently pressed following harvest. The final blend did not contain any hard press fractions. After cold settling, the juice was inoculated with yeast and then fermented cold in stainless steel tanks for over 20 days to build up fruit. 9% Moscato was blended in to add more floral aromatics and guava fruit. The wine was bottled in early January 2016 to preserve fruit esters and freshness.
Vineyard Notes
We have been producing Symphony since 1987, when the late Sylvia Sebastiani asked then winemaker, Mark Lyon, to make it for the tasting room! Symphony, a cross between Muscat of Alexandria and Flora (Grenache x Gew├╝rztraminer), was developed by the late Dr. Harold Olmo of U.C. Davis. It is a Muscat improved hybrid that is adapted to warmer inland areas. The fruit for this wine came from Lodi, California, which features warm, sunny days and cooling winds in the afternoons through the evenings.
