Tasting Notes

The 2022 vintage opens with black cherry, cassis, cedar, and toffee, with subtle notes of graphite and black tea. Bold yet smooth and refined, the palate delivers a harmonious interplay of layered, bright fresh fruit that is plush and deeply concentrated. This is an incredibly food-friendly Cabernet Sauvignon and pairs beautifully with wood-grilled steak with braised wild mushrooms.

  • 2021

    The 2021 vintage opens with terroir-driven aromatics of black cherry, dried plum, and cassis. These characters carry through to the plush palate, adding layers of caramel and ginger baking spice. Fine-grained tannins deliver a round mouthfeel and a long, silky finish. Pair this Cabernet Sauvignon with aged cheddar cheese, grilled beef filet with potato gratin, or Moroccan spiced lamb.

    The 2018 Cherryblock is a wine of great complexity, intricacy and sophistication. In the glass, the wine is deep purple with ruby highlights, and offers intense, concentrated aromas of cassis, tobacco and graphite. Flavors of black cherry fruit wash over the palate, with complex layers of cacao, cedar and tobacco. Full soft tannins complete the profile with lingering notes of herbs and spice. This wine is drinking well in its youth, but will improve over the next 10+ years.

    The 2017 Cherryblock is a wine of great complexity, intricacy and sophistication. In the glass, the wine is deep purple with ruby highlights, and others intense, concentrated aromas of blackberry, vanilla and baking spices. Waves of rich black fruit wash over the palate, with complex layers of cedar and tobacco. The finish is framed by full soft tannins and lingering notes of herbs and spice. This wine is drinking well in its youth, but will improve over the next 10+ years.

  • 2016

    Complex, velvety and bold, the 2016 Cherryblock delivers a great deal of intricacy and sophistication. The wine fills the glass with deep purple and ruby highlights, followed by intense, concentrated aromas of blackberry, vanilla and baking spices. Waves of rich black fruit wash over the palate, with complex layers of cedar and tobacco. The tannins from this vintage were more intense than usual due to the smaller crop size, leading us to blend in a little more Merlot than is typical. The finish is framed by full soft tannins and lingering notes of herbs and spice. This wine is drinking well in its youth, but will improve over the next 10+ years.

Since its creation, Cherryblock has been our flagship wine at Sebastiani. The majority of the fruit (88%) is Cabernet Sauvignon from our original Old Vines block planted in 1961. The remaining 12% is Malbec, also sourced from our estate vineyards. Our goal is to create a benchmark Cabernet that possesses the elegance, structure and terroir-driven aromatics only found in Cherryblock.
