Savory mushrooms and melty Fontina make this grilled cheese earthy, rich, and totally satisfying. It’s a comforting vegetarian option with serious flavor.
Pair it with: Pinot Noir or Chardonnay to complement the umami depth.

Ingredients

  • 4 slices rye or whole wheat bread
  • 1 cup sliced mushrooms (cremini or button)
  • 1 tbsp olive oil
  • 1/2 fresh thyme or 1/4 tsp dried thyme
  • 1 cup shredded Fontina cheese
  • 2 tbsp butter (for grilling)
  • Salt and pepper to taste

Directions

  • Heat olive oil in a skillet over medium heat. Add mushrooms and thyme, cooking until browned and tender (about 5–7 minutes). Season with salt and pepper.
  • Layer cheese and mushrooms between two slices of bread. Top with another slice.
  • Butter the outsides of the bread and grill in a skillet over medium heat until golden brown and cheese is melted (about 3–4 minutes per side).
  • Slice and serve warm.
