Ingredients
- 4 slices rye or whole wheat bread
- 1 cup sliced mushrooms (cremini or button)
- 1 tbsp olive oil
- 1/2 fresh thyme or 1/4 tsp dried thyme
- 1 cup shredded Fontina cheese
- 2 tbsp butter (for grilling)
- Salt and pepper to taste
Directions
- Heat olive oil in a skillet over medium heat. Add mushrooms and thyme, cooking until browned and tender (about 5–7 minutes). Season with salt and pepper.
- Layer cheese and mushrooms between two slices of bread. Top with another slice.
- Butter the outsides of the bread and grill in a skillet over medium heat until golden brown and cheese is melted (about 3–4 minutes per side).
- Slice and serve warm.
