Ingredients

  • 4 slices sourdough bread
  • 1 cup shredded Gruyère cheese
  • 1 large yellow onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 2 tbsp butter (for grilling)
  • Salt and pepper to taste

Directions

  • Heat olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt. Cook, stirring occasionally, until deeply golden and soft (about 15 minutes). Stir in balsamic vinegar and cook 1–2 more minutes.
  • Layer Gruyère cheese and caramelized onions between slices of bread.
  • Butter the outsides of the bread and grill over medium heat until golden brown and cheese is melted (about 3–4 minutes per side).
  • Slice and serve warm.
