Grilled zucchini, eggplant, roasted peppers, and a swipe of hummus or pesto come together in a crusty baguette layered with feta and arugula. It’s vibrant, fresh, and full of Mediterranean flavor.
Pair it with: A chilled glass of Rosé or Pinot Grigio to keep it crisp and summery.

Ingredients

  • 1 small baguette
  • 1 zucchini, sliced lengthwise
  • 1 small eggplant, sliced into rounds
  • 1/2 cup roasted red peppers, sliced
  • 1/4 cup crumbled feta
  • 1 cup arugula
  • 2 tbsp hummus or pesto
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Directions

  • Brush zucchini and eggplant slices with olive oil, season with salt and pepper, and grill or roast until tender (about 5–7 minutes per side).
  • Slice baguette lengthwise and toast lightly if desired.
  • Spread hummus or pesto on both sides of the baguette.
  • Layer grilled vegetables, roasted red peppers, crumbled feta, and arugula.
  • Close sandwich, press lightly, slice, and serve.
