Ingredients
- 1 small baguette
- 1 zucchini, sliced lengthwise
- 1 small eggplant, sliced into rounds
- 1/2 cup roasted red peppers, sliced
- 1/4 cup crumbled feta
- 1 cup arugula
- 2 tbsp hummus or pesto
- 1 tbsp olive oil
- Salt and black pepper to taste
Directions
- Brush zucchini and eggplant slices with olive oil, season with salt and pepper, and grill or roast until tender (about 5–7 minutes per side).
- Slice baguette lengthwise and toast lightly if desired.
- Spread hummus or pesto on both sides of the baguette.
- Layer grilled vegetables, roasted red peppers, crumbled feta, and arugula.
