Bright basil pesto and gooey mozzarella make this grilled cheese an herbaceous, melty dream. Add tomato or sun-dried tomato for an extra burst of flavor.
Pair it with: Sauvignon Blanc to match the fresh, zippy notes of the pesto.
Ingredients
- 4 slices rustic Italian bread
- 1 cup shredded mozzarella cheese
- 2 tbsp basil pesto
- 2 tbsp butter (for grilling)
- Optional: tomato slices or sun-dried tomatoes
Directions
- Spread pesto on the inside of each slice of bread. Layer with mozzarella and optional tomatoes.
- Butter the outsides of the bread and grill until golden and the cheese is melted (about 3–4 minutes per side).
- Slice and serve hot.
