Ingredients
- 1 cup couscous
- 1 cup water
- 1 tbsp olive oil
- 1 cup chopped strawberries
- 1/4 cup chopped fresh basil
- 1-2 tbsp balsamic vinegar
- Salt and pepper to taste
Directions
Boil water, stir in couscous, cover, and let sit for 5 minutes. Fluff with a fork.
Mix in olive oil, strawberries, basil, vinegar, salt, and pepper.
Serve chilled or at room temperature.
Optional: Add crumbled feta or goat cheese. Add sliced almonds.
