This Cherry Balsamic Glazed Chicken is a romantic twist on a classic. Sweet cherries, tangy balsamic, and a touch of honey create a glossy, flavorful glaze that complements juicy, golden-seared chicken thighs. Ingredients for the Chicken
- 4 boneless, skin-on chicken thighs (or breasts, if preferred)
- Salt & pepper
- 1 tbsp olive oil
Ingredients for the Cherry Balsamic Glaze
- 1 cup fresh or frozen cherries, pitted and halved
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1 tsp fresh thyme (or 1/2 tsp dried)
- Salt & pepper to taste
Directions
- Sear the Chicken:
Preheat oven to 400°F. Season chicken with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat and sear chicken, skin side down, for 4–5 minutes until golden. Flip and cook another 2 minutes.
Serve:
Plate the chicken with a drizzle of the remaining glaze. Great with roasted potatoes or herbed farro.
- Make the Glaze:
While chicken sears, combine cherries, balsamic vinegar, honey, mustard, thyme, and a pinch of salt and pepper in a small saucepan. Simmer over medium heat for 8–10 minutes until the mixture thickens slightly and cherries soften.
- Glaze & Roast:
Spoon half the glaze over the chicken and transfer skillet to the oven. Roast for 15–18 minutes or until internal temp reaches 165°F. Brush with more glaze before serving.
