Ingredients
- 2 oranges, peeled and sliced into rounds
- 1 grapefruit, peeled and sliced into rounds
- 1 avocado, sliced
- ½ fennel bulb, thinly shaved
- ¼ red onion, thinly sliced
- ¼ cup toasted pistachios (or almonds)
- ¼ cup crumbled feta or goat cheese (optional)
- Fresh mint leaves, for garnish
Dressing
- 2 tablespoons olive oil
