Enjoy the sunny flavors of citrus paired with the richness of avocado in this vibrant salad. Thinly sliced fennel adds a delicate anise note and satisfying crispness.

Ingredients

  • 2 oranges, peeled and sliced into rounds
  • 1 grapefruit, peeled and sliced into rounds
  • 1 avocado, sliced
  • ½ fennel bulb, thinly shaved
  • ¼ red onion, thinly sliced
  • ¼ cup toasted pistachios (or almonds)
  • ¼ cup crumbled feta or goat cheese (optional)
  • Fresh mint leaves, for garnish

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon Dijon mustard
  • Salt & pepper, to taste

Directions

Arrange the orange, grapefruit, and avocado slices on a plate.

Sprinkle with shaved fennel, red onion, and toasted pistachios.
