Colcannon is a traditional Irish dish of creamy mashed potatoes blended with tender cabbage, enriched with butter and a touch of scallions for a comforting, flavorful side. A rich Chardonnay complements the buttery goodness of this Irish classic.
Ingredients
- 2 lbs potatoes, peeled & cubed
- ½ cup heavy cream (or milk)
- 4 tbsp butter
- 2 cups chopped green cabbage (or kale)
- 4 green onions, sliced
- Salt & black pepper, to taste
Directions
Boil potatoes in salted water until fork-tender (about 15–20 minutes).
In a pan, sauté cabbage (or kale) with 2 tbsp butter until softened (about 5 minutes).
Drain potatoes and mash with remaining butter and cream.
Stir in sautéed cabbage and green onions. Season with salt and pepper.
