Ingredients

  • 1 lb white fish (cod, halibut, or tilapia), cut into strips
  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1 cup cold sparkling water or club soda
  • Oil, for frying
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • Lime wedges for serving

Spicy Crema Ingredients

  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp mayo
  • 1-2 tsp hot sauce
  • Juice of 1/2 lime
  • Salt to taste

Directions

  • In a bowl, whisk together flour, cornstarch, baking powder, salt, and paprika. Add sparkling water and stir until just combined.
  • Heat oil in a skillet over medium-high heat. Dip fish in the batter and fry until golden brown, about 2–3 minutes per side. Drain on paper towels.
  • In a separate bowl, mix together crema ingredients.
  • Warm tortillas. Assemble tacos with cabbage, crispy fish, a drizzle of crema, and a squeeze of lime.
  • Serve immediately with sparkling wine.
