Ingredients

  • 6 Eggs
  • 1/4 cup Milk
  • Salt & pepper to taste
  • 1/2 cup crumbled goat cheese
  • 2 Tablespoons of fresh herbs; chives, basil, or parsley
  • 4 cups arugula
  • 1 lemon, juiced
  • 1/4 cup olive oil

Directions

Whisk 6 eggs, ¼ cup milk, and season with salt & pepper.

Stir in crumbled goat cheese and fresh herbs (chives, basil, or parsley).

Pour into a buttered skillet and cook on low heat until set.

Serve with a light arugula salad dressed with lemon juice and olive oil.
