Ingredients
- 6 Eggs
- 1/4 cup Milk
- Salt & pepper to taste
- 1/2 cup crumbled goat cheese
- 2 Tablespoons of fresh herbs; chives, basil, or parsley
- 4 cups arugula
- 1 lemon, juiced
- 1/4 cup olive oil
Directions
Whisk 6 eggs, ¼ cup milk, and season with salt & pepper.
Stir in crumbled goat cheese and fresh herbs (chives, basil, or parsley).
Pour into a buttered skillet and cook on low heat until set.
