Bright, fresh, and full of citrus-herb flavor, these grilled chicken skewers are everything we love about summer cooking. Marinated in lemon, garlic, and garden herbs, they’re easy to prep ahead and perfect for grilling. Pair with a chilled Sauvignon Blanc and finish with a citrusy dessert for a crisp, vibrant date night from start to finish.

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1 1/2 chunks
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 1 tbsp lemon zest
  • 2 garlic cloves, minced
  • 1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • Optional: wooden skewers, soaked in water for 30 minutes

Directions

Marinate the Chicken:
• In a bowl or zip-top bag, mix olive oil, lemon juice, zest, garlic, rosemary, thyme, salt, and pepper. Add chicken pieces and toss to coat.
Refrigerate for 1–3 hours to allow flavors to absorb.


Assemble the Skewers:
• Thread marinated chicken onto skewers (about 5–6 pieces per skewer). Discard excess marinade.


Grill:
• Heat a grill or grill pan over medium-high heat.
• Grill skewers for 10–15 minutes, turning occasionally, until chicken is golden and cooked through (internal temp 165°F).


Serve:
• Transfer to a platter, garnish with fresh herbs or lemon wedges if desired.
• Serve with chilled Sauvignon Blanc for a refreshing summer combo
