Tomato Sandwich

Pair with your favorite Pinot Noir. Juicy tomatoes and earthy Pinot Noir create a garden-fresh, savory balance.

Ingredients

  • 1 cup garlic aioli
  • 2 Tbsp. chopped fresh basil leaves
  • 12 slices white sandwich bread
  • 2 lb. heirloom tomatoes
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Directions

In a medium bowl, combine the garlic aioli with the basil. Spread the mixture on one side of all the bread slices (there may be some leftover spread).

Slice the tomatoes into 1/4-inch slices. Place the slices on the aioli side of 6 slices of bread, overlapping as necessary.

Season the tomatoes with salt and pepper. Place the other 6 slices of bread, aioli side down, on the tomatoes.

Serve immediately.
